Cut to the bone: Flank or filet mignon?

Preheat oven to 350 degrees.

Tie the eye round with butcher's twine. Season generously with salt and pepper. In a large roasting pan set over high, heat the oil until it is almost smoking. Sear the roast on all sides until it has a good brown crust, 4 to 5 minutes per side. Transfer the roast to a plate and set aside.

Add the onions and garlic to the roasting pan and cook, stirring, until browned, about 5 minutes. Settle the bones among the onion and garlic, arranging them into a rack. Put the roast on top of the bones and onion, then scatter the butter pats over the top of the meat. Add stock or wine to the bottom of the pan, making sure that the liquid does not cover the bones.

Transfer the roasting pan to the oven and cook for 35 minutes, basting every 15 minutes or so with the pan juices and the stock. The roast is done when an instant-read thermometer inserted into the thickest part of the meat registers 120 degrees for medium-rare.

Remove the pan from the oven and let it rest for 5 to 10 minutes before slicing. The roast can be served hot or at room temperature. Spread the marrow from the bones on bread to accompany the meal.

Prime Rib Roast Question - DrybagSteak

My primal has a lovely fat cap covering the entire top of it, as a good ribeye primal should. Typically when cooking a prime rib, you want to leave that fat cap alone, as it will baste the meat / melt during cooking. However, after 45 days of dry aging, that fat cap is going to be dried out. So my question is, what would you guys recommend doing about that (or what has worked in the past for you if you have experience with the situation)? Would you trim away the fat until it is like the normal consistency of fat? Or would you leave the dried fat untrimmed and assume it will melt some during cooking? I recently aged a 16# boneless ribeye for 60 days and in my case my fat cap was really excessive so I trimmed it back aways before even aging it. Then after the aging I did exactly what you wondered - I trimmed the hardened fat back to leaving a layer of white. You should be able to see the remaining fat layer on the outer edges after the cook to a medium rare stage.
