New west-side eatery Chicken Palace offers standout lunch buffet



I was surrounded by tables of big ol' boys who had piled their plates high from the Chicken Palace buffet lunch line in west Tulsa.

"These guys come in hungry, and they need to get their food fast, so they like the buffet," owner Michelle Sullivan said.

The all-you-can-eat buffet ($7.99), served 11:30 a.m. to 1 p.m., is not large, but there are plenty of meat and potatoes and vegetables, and all of it was extraordinary on the day we were there.

My plate of food was almost as tall as my neighbors', and I plowed my way through the whole thing. Couldn't stop eating. I was so full I couldn't eat for two days, but that's another story.

What I had on my plate was rotisserie chicken, rotisserie pork roast, fried chicken, mashed potatoes and gravy, potato casserole, green beans, broccoli and cheese Devon, a dinner roll, and, on a separate plate, a warm brownie.

The rotisserie chicken was falling off the bone, and the fried version was almost as tender. Both were well-cooked and subtly seasoned with flavors I couldn't quite identify.

"When we started, I had my cook do the chicken old-fashioned Oklahoma style, and it was OK," Sullivan later explained. "But my husband is from the Dominican Republic, and they use all kinds of seasonings to create a lot of flavor.

"We've started seasoning the chicken a little, and I think people really are liking it."

The broccoli and cheese was cooked with bits of chicken in a creamy sauce, and the potato casserole had a crunchy topping, like fine bread crumbs. The mashed potatoes tasted fresh and were accompanied by a peppery cream gravy, while the green beans were cooked with onion and bacon.

Sullivan said buffet items will change from day to day, but the chicken always is present.

One diner in our group wanted breakfast - it's served all day - and chose French toast and sausage ($4.50). Her plate included three thick pieces of French bread and, under the sweet syrup, imparted flavors of cinnamon and egg. Two large ovals of patty sausage had a slightly sweet edge.

"I guess because of the name a lot of people don't think we serve breakfast, but we have a breakfast menu starting at 6 a.m.," Sullivan said.

That list includes several egg dishes, chicken-fried steak and egg, biscuits and gravy, breakfast burrito, omelets, and a breakfast sandwich with eggs, cheese and bacon, sausage or ham on a biscuit, or Texas toast.

If you have a fryer, set it to 400 deg, however, if you have a large pot, that'll do. Set the heat to the highest setting that you can. Now, Slice the potatoes as thin as you can so that they look similar to potato chips... or to your desired thickness.. place them in the super hot oil (I mean it boils when you put anything in it). With a fryer, pull them out in about 10 min to 15 min. They should be golden grown and crispy. In a pot, you might have to baby them, since they can get browned on one side, and not as done on the other. In other words, you'll probably have to turn them a little every 5 minutes or so just to get the even color that's desirable. When they're done, place them on some paper towels in a large bowl and immediately sprinkle with a couple of dustings of the WT Home Fries Seasoning until covered. Then sprinkle with salt. Let cool, and bit right in! I have two lovely daughters (3 & 1) and another baby on the way (I am 6 months currently). I have an amazing husband who supports my cooking habits. I Love to cook and create. Also love to shop. You can't stop me when I'm in a Williams Sonoma though, I tend to have tunnel-vision! I am a stay at home mom, currently living in Sacramento, CA.
